Chilled Avocado Soup

Ingredients:

  • 1 lb cucumbers, peeled and chopped 1 garlic clove, smashed

  • 1⁄2 c water

  • 1 c arugula

  • 2 TBS mint

  • 2 TBS parsley

  • 2TBS cilantro

  • 2 TBS basil

  • 1 1⁄2 TBS red wine vinegar 1 Tbs lemon juice

  • salt

  • 1⁄4 c olive oil

  • 1 c mashed avocado

Directions:

Put everything in a blender and blend until smooth.

Eat chilled with toasted pepitas and paprika as a garnish.
